Khoudenjal, also spelled khunjul, is a winter street drink brewed from around 18 to 20 spices and herbs including galangal, ginger, cinnamon, cloves, peppercorn, nutmeg flower and star anise, known as a warming, curative winter drink.

The stall serves the sweet-tart, pungent infusion from large shiny copper vats on the square, popular with locals in the colder months, sold as a takeaway cup. The spices are sourced from the south of Morocco.
